Tomato & Buckwheat Raw Vegan Pizza With Almond Mayo

There really isn’t much you miss out on while enjoying more raw foods, you even get to eat pizza!!!

If you’re looking for a delicious raw food dinner that is filling and reminiscent of the cooked comfort foods we all love so much, look no further that this yummy pizza recipe.

You do need to prepare for this meal by soaking the buckwheat, flaxseed and almonds and making the pizza bread 8hrs or the day before you’re planning on eating it. The up side though, is that the mixture for the bread that forms the pizza base is enough to make 4 pizza bases, which can be stored in the fridge, freezer or cupboard for a few weeks and the almond mayo even lasts 3-4 days in the fridge. So after making the first one, you can very quickly assemble the second on a few days later in a matter of minutes.

You can serve this pizza with a big salad for a fully raw meal or some homemade roasted white or sweet potato chips to keep something familiar on the plate for more cautious eater.

The topping you choose are up to you, but as the base is quite rich, I found that a mild juice combination of grated cucumber and diced fresh tomatoes balanced it out perfectly

If you’ve been toying with the idea of getting a dehydrator, then I’d recommend it and you’ll need one to make this recipe. Luckily, the prices of many brands has dropped and newer much more affordable models are on the market now too, so you can get one for as little as £30 instead of the £100 price point  you’d normally find them at.

Tomato & Buckwheat Raw Vegan Pizza with Almond Mayo

Wheat, Gluten, Dairy, Yeast & Sugar Free

Prep Time – 40 mins

Dehydrating Time – 8hrs

Serves 4 large or 6 smaller slices

 

For the pizza bread you’ll need:

1 cup of buckwheat soaked for 5hrs or overnight   

1 cup of ground flaxseed soaked in 1 cup of water for 2hrs  

3 medium tomatoes chopped                 

1 medium onion chopped                        

¼ cup of olive oil and ½ tsp of sea salt  

¼ cup of fresh coriander                           

¼ cup of fresh flat leaf parsley

¼ cup of sundried tomatoes soaked for 30mins in warm water

 

For the Almond Mayo you’ll need: 

1 cup of almonds soaked for 5hrs

¼ cup of lemon juice (the juice of about 1 whole lemon)

1 clove of garlic

¼ tsp of salt

¾ cup pure water

 

For the Toppings you’ll need: 

2 medium tomatoes diced

1/2 cucumber grated

1/2 tsp of dried basil or oregano

2tbsp of olive oil

A pinch of salt

 

Directions 

To make the Pizza bread you’ll need to: Put the soaked buckwheat, tomatoes, onion, salt, olive oil, sundried tomatoes, parsley and coriander into a food processor and process until broken down, then add the flaxseed and process until combined. Spread about 1-1 ½ cups of the mixture on to a dehydrator sheet or baking paper greased with olive oil, in any shape you like, just make sure it’s even and not too thick (about ¼ inch deep). Dehydrate on 35 degrees celsius  for about 4hrs until dry on top. Then flip it over onto the tray, carefully peel off the sheet scraping off any batter stuck to it and spreading it back on the base and dehydrate for another 4hrs until dry throughout.

To make the almond mayo you’ll need to: Put all the ingredients into a blender and blend until smooth. If there’s any left it can be stored In an airtight container in the fridge and this will last 3 days.

To assemble: Spread the almond mayo onto the bread, cover with the grated cucumber, scatter on the tomatoes evenly, drizzle with the olive oil, sprinkle with the dried herbs and salt, slice into pieces and serve! Enjoy!!!
